Your main mission as a Butcher is to prepare, portioning, and proper storage of all meat (beef, pork, poultry, seafood as required) for the resort’s multiple food outlets, events, and banquets. This role ensures high-quality cuts, minimizes waste, maintains food safety compliance, and supports the culinary team to meet production needs.
As Butcher, What will your day-to-day work be like?:
Receive, inspect, and verify meat deliveries (primal cuts, boxed meat) for quality, weight, and specification.
Butcher, trim, boning, deboning, and portion meat: steaks, roasts, chops, poultry, etc., according to recipes and yield standards.
Grind meat when necessary (for burgers, sausages, etc.).
Prepare specialized cuts or marinades as needed for restaurants, banquets, or special events.
Maintain a butchery inventory, track usage, and report stock levels.
Coordinate with purchasing or the kitchen leadership to forecast meat needs and place orders.
Ensure proper rotation of stock (FIFO), labeling with dates, and correct storage.
Adhere to HACCP (Hazard Analysis and Critical Control Points) protocols and local food-safety regulations.
Maintain cleanliness and sanitation of the butchery station, tools, knives, bandsaws, grinders, and storage areas.
Regularly clean, sanitize, and maintain butcher equipment and ensure safe operation.
Maximize yield from meat cuts to control food cost.
Minimize waste by making efficient cuts and using trim or scraps appropriately.
Work with culinary leadership to plan cuts to match menu needs and minimize overproduction.
Communicate with sous chef / executive chef about meat needs, shortages, or quality issues.
Coordinate with other kitchen teams (line cooks, banquet, specialty restaurants) to provide correct cuts in a timely fashion.
Participate in daily kitchen briefings, production meetings, and shift handovers.
Use knives, saws, and other butchery equipment safely.
Report any hazards (e.g., equipment issues, slippery surfaces) to kitchen leadership.
Follow resort policies on personal hygiene, uniform, and grooming.
Maintain butchery logs: deliveries, usage, yield, and wastage.
Document any meat quality issues or supplier discrepancies.
Assist in monthly or periodic reports on meat usage, costs, and inventory.
Mentor or train junior kitchen staff or assistants on proper butchery techniques.
Stay updated on butchery methods, meat cuts, and culinary trends.
Who is the ideal person for this position?:
Academic Qualification: Associate Degree or Culinary training or equivalent experience in a professional kitchen environment
Experience: 1 year experience in specific position
Additional: Certifications: Valid food handling and safety certifications as required by local regulations. Language Skills: Proficiency in English; knowledge of Spanish or Dutch is an advantage.
